Chris Niddrie was born and raised in Calgary, Alberta, Canada. At the young age of 27, Chris achieved Certified Chef de Cuisine designation from the Canadian Culinary Institute – the highest professional culinary recognition and accreditation in Canada. After spending over a decade in the culinary industry in some of the finest hotels, clubs and restaurants in Calgary.

In 2003, Chris co-founded Copper Pot Creations with his wife Crystal, combining his diagnosis and his expertise to create convenient meals that were safe for celiacs, tasted great and were free of artificial ingredients and preservatives. Fresh herbs & spices paved the way for delicious savoury and vegan entrees with flavours from around the globe – available in store freezers across Alberta and at Country Grocer locations across Vancouver Island. Fast Forward 10 Years – Cedar Sky Foods was Born
With their daughter also diagnosed with celiac disease and a desire to relocate to Vancouver Island, the Niddries made the move – lock, stock and commercial kitchen to Parksville, BC. Production of Copper Pot Creations continues in their state of the art, 100% gluten-free, nut-free and peanut-free facility.
The move rekindled Chris’ desire to create delicious, fresh gluten-free meals, baked or ready-to-bake goods and specialty foods from the freshest, locally-grown ingredients. Cedar Sky Foods was born!
