Gooseberries must be harvested when their green skins are see through thin

We used to have about 8 gooseberry bushes on the farm when I grew up. Of course, gooseberries are super delicious and happen to have a sky-high nutritional profile as well. The trouble with gooseberries is that they are edible two weeks before they are fully ripe, at least to a child’s taste buds, so between the six of us we had the branches stripped clean before Dad ever had a taste.

We were warned to stay away “until their green skins were see through thin” year after year all to no avail. My father’s discipline included consequences so one summer afternoon he ran the tractor and mower through the bushes to show us who had the final say and that disobedience was not a matter of choice!


Red Black CurrantsWe’ve pretty much exhausted our strawberry supply (with the help of a few extra small hands and mouths) and are now thick in the black and red currants.

Currants are nutritious super stars and much more popular in Europe than North America. The number one benefit! It has been found that the skin of black currents is rich in anthocyanin which has shown to inhibit the growth of liver cancer cells. Other benefits; better blood flow, immune boosters, eye and gut and kidney health. Black and red currants carry four times the number of Vitamins than oranges.

The leaves may be infused in a tea and the seeds extracted for their oil. Black currant oil is highly recommended for arthritis. The oil is available in most health food stores in capsules.

One of my favorite treats is a berry coulis served with yoghurt or ice cream. The slight tartness and bright colour of a coulis is an awesome pairing and a delicious feast for the eye. And then there are raspberries! Here’s my favourite recipe!

Run 3 cups of raspberries through a masticating juicer, food processor or give them a quick twirl in a blender. Push the liquid through a sieve to separate the seeds.  A juicer does all this in one step.

I then soften a bunch of dates in the juice for half an hour or so and blend until smooth.   Dates give the coulis a nicer consistency, but you can use coconut sugar too.
