Mangoes may well be the most consumed fruit on the planet!

  • Mangoes are loaded with Vitamin A (it must be that carrot-colour inside) and a whopping dose of Vitamin C, too.
  • The fiber content in this fruit will slow down the absorption of the 14 grams of sugar an average mango contains
  • Diabetics are advised to consume greens or protein when enjoying a mango.
  • Mangoes are also indicated to be positive in managing glaucoma and macular degeneration.

 gluten free mango carrot saladI picked up a box of Atulfo Mangoes at IGA last week and will freeze them as they ripen. A potato peeler is my preferred method of taking off the skin. You can follow the shape of the large shell for two good size cuts and than deal with the left over on the edges.

Serving Ideas

  • How about a green salad with a handful of soaked almonds and half a Mango for lunch?
  • Half of the frozen mangoes in our house end up in the blender with greens, turmeric, cucumber and lemon for a sweet and creamy smoothie.
  • The other half ends up in the food processor with a frozen banana for delicious ice cream. You can add thick coconut cream, scooped from the top of a refrigerated can of coconut milk.
  • The following recipe was on the menu in my Cambodian cooking class. Our dressing included hard to find kafir leaves and lemon grass)

Cambodian-Inspired Mango Carrot Salad

  • 1 large carrot, julienne cut
  • 1 large unripe mango, julienne cut
  • 3 TBSP cilantro or parsley, finely chopped
  • 1 green onion, finely sliced


  • 1 TSP grated ginger
  • ½ TSP turmeric powder
  • pinch of salt
  • a little cayenne or freshly ground pepper
  • juice of ½ lime (or lemon)
  • 2 TBSP EV olive oil
  • 1-2 TSP honey

Peel the mango and carrot. Slice into thin strips with a julienne slicer or mandolin from the whole mango and carrot. (Careful with your fingers!) Stir in chopped cilantro and green onion.

Blend dressing ingredients and serve at room temperature. This is salad is nice served on a bed of glass noodles and mung bean sprouts. Glass noodles are often made from cassava root, a starchy gluten-free noodle.
