A Red Seal Baker, owner Anjul grew up in the foothills of the Himalayas, then studied Culinary Arts in Northern India, with a focus on European pastries, confectionery to ice cream sorbets, hand-made chocolates as well as Middle Eastern and Indian Cuisine.
His professional career spans such 5-star hotels as the renowned OBEROI Hotel, the Marriot in Dubai, LUX Hotel in the Maldives and the finest dining restaurant, Luca, in the Cayman Islands. In Canada, Anjul worked at FAIRMONT Lake Louise before moving to Victoria.
Anjul’s interest in gluten-free baking began with his marriage to his gluten-intolerant wife, Rajna. Determined to offer her quality gluten-free baking, Anjul mastered exquisite gluten-free and often vegan versions of the pastries and delicacies he had perfected professionally. Lucky for all of us!
About the Bakery
Anjul bakes from his dedicated gluten-free household with the quality flours produced by Cloud 9 Specialty Bakery in Port Coquitlam. All of the other component ingredients of Trotter’s baking are naturally gluten free or confirmed to be gluten-free.
Because his wide selection of macarons require the use of a large convection oven, Anjul produces this single line of baking in a commissary kitchen. These rentable commercially-licensed kitchens are where many of our favourite gluten-free food trucks and small bakers safely prepare the food we enjoy.
Since there are no ‘dedicated gluten-free’ commissary kitchens on Vancouver Island, Anjul brings in all his own ingredient and equipment so that there is no risk of cross contact. The area where he works is already clean but Anjul undertakes to clean it again, to our standards. No other baking takes place in the facility while he is baking gluten free.
