Recipe! Wescana Foods’ Gluten-Free Oat Cakes
Enjoy these oatcakes with your favourite warm drink on a cold day, or while you are out on a nice long walk with friends and family. Everyone is sure to love your oatcakes, as long as they are made with that one secret ingredient, love.
INGREDIENTS
- 2 cups rolled oats
- 1 cup GF all-purpose flour
- 1/2 TSP salt
- 1/4 TSP baking soda
- 1/2 cup brown sugar
- 1/2 cup vegetable oil or butter
- 1/4 cup hot water
INSTRUCTIONS
- Preheat oven to 400˚ and line baking sheet wth parchment paper
- Dissolve baking soda in hot water (add a little more water if needed)
- Combine dry ingredients with butter, then add dissolved baking soda
- Mold into one large dough ball, then press or roll out onto the parchment paper / cookie sheet to a thickness of 1/4 inch
- Cover & chill for 15 minutes to firm up the dough
- Remove from fridge and score dough to make 8-10 squares.
- Bake for 10-15 minutes until golden brown
- Separate the cakes along the score lines and allow to cool
- Enjoy these crunchy treats with your favourite beverage. Dip them in chocolate to make them extra special!
