With the smell of fresh coffee lingering in the air, the charming wood plank floor and woven baskets of produce capping off the aisles, it’s easy to see why the shoppers are in a good mood. There’s a quaint feeling of discovery that permeates the shop, as though the perfect ingredient is waiting just around the corner. “I’ve tried to offer a lot of organic products and local products. “What is tomato jam? It’s a thick, intensely tomato-flavoured condiment that is delicious enough to
- spread on your favourite burger (you’ll never use ketchup again)
- serve up on a fresh (gluten-free) baguette
- toast point with cheese
- toss into pasta with some fresh parmesan shavings
- add to your homemade soup to elevate it to a whole new level
- eat it all by itself right out of the jar. It should come with a warning on the label: “highly addictive.”
Island Dish: Summertime Spinach Salad
“I have to be honest here and tell you that this recipe is courtesy of my sister-in-law, Ros Scott. I love this salad for many reasons: it is colourful, quick to prepare, super healthy and the dressing is to die for!
There are a number of ingredients in this recipe that are part of the top 100 healthiest foods list. First of all, we have the fresh local spinach that is readily available at markets this time of year. Spinach is among the top greens for folate, and it contains high amounts of vitamin A, iron, potassium, calcium, zinc, and selenium, which offers antioxidant protection and supports thyroid function.” See recipe here

“When I think of spring, lamb and asparagus come to mind! The Galloping Goose Sausage Co. in Metchosin makes excellent herbed lamb sausages. They are gluten- , MSG- and preservative free. We are fortunate here at the Deep Cove Market to be able to carry fresh asparagus from Raphael at Guités Farm on Oldfield Road. I’m a big fan of easy one-dish meals, so I have combined a number of items I carry here at the Market into one entrée. This dish could easily become gluten free by substituting the pasta with a rice pasta or quinoa. I also think the lemon cooking sauce would pair nicely with chicken if you are not a lamb fan. We carry farm-fresh, free-range, antibiotic-free chicken from Kildonan Farms located right here in North Saanich. I am also a huge lover of Greek food, so I combined the lemon and lamb with peppers, onions and feta. I hope you enjoy it as much as I did! ” See recipe …

Every THIRD FRIDAY, she hosts a ‘virtual office hour’ on the Canadian Celiac Association Facebook Group from 12 – 1pm Pacific Standard Time / 3 – 4pm Eastern Standard Time.

Selena’s Road to Diagnosis
- “When I was going through university, I was exhausted, ALL the time. I had to drag myself out to hang out with friends, and if I had it my way I would have spent most days in bed sleeping. It was not unknown for me to sleep 12-16 hours a day. Call me crazy, but I related it all to the busy-ness of school. I was even checked for anemia at one point (common with celiacs) and I was ‘fine.’
- The symptoms continued through school and the brain fog was undeniable. I distinctly remember during my dietetic internship (like a medical residency except everything is nutrition based) at Kelowna General Hospital sitting in the office, charting on a patient and, literally, feeling like my brain was so fuzzy that I could barely keep my eyes from nodding off. It was awful.
- Another thing I didn’t pay much attention to, was bowels. I was always constipated. Never the other way around. Never. And, I also remember mentioning this to my gastroenterologist just before the endoscopy and he said ‘oh, well with your very low antibody levels and constipation, there is a very low chance that you are actually celiac but we will proceed with the endoscopy since you’re prepped and ready to go.’
- The piece of paper I received after the endoscopy said to follow up with my GP. I did follow up with my GP and the report came back positive for celiac disease. My GP said “well, you’re celiac. But, you’re a dietitian, right, so this should be easy for you!”
- Perhaps I had a leg up in the nutrition part of it, but I think we all know that the gluten free diet is not a walk in the park. And, although, I am so appreciative of the medical care I received, it did open my eyes to the lack of knowledge within the medical community when it came to celiac disease and the lack of support offered to individuals with celiac disease.
That’s how Healthbean Nutrition was born!

Selena’s Road to Diagnosis
- “When I was going through university, I was exhausted, ALL the time. I had to drag myself out to hang out with friends, and if I had it my way I would have spent most days in bed sleeping. It was not unknown for me to sleep 12-16 hours a day. Call me crazy, but I related it all to the busy-ness of school. I was even checked for anemia at one point (common with celiacs) and I was ‘fine.’
- The symptoms continued through school and the brain fog was undeniable. I distinctly remember during my dietetic internship (like a medical residency except everything is nutrition based) at Kelowna General Hospital sitting in the office, charting on a patient and, literally, feeling like my brain was so fuzzy that I could barely keep my eyes from nodding off. It was awful.
- Another thing I didn’t pay much attention to, was bowels. I was always constipated. Never the other way around. Never. And, I also remember mentioning this to my gastroenterologist just before the endoscopy and he said ‘oh, well with your very low antibody levels and constipation, there is a very low chance that you are actually celiac but we will proceed with the endoscopy since you’re prepped and ready to go.’

- toss into pasta with some fresh parmesan shavings
- add to your homemade soup to elevate it to a whole new level

“I have to be honest here and tell you that this recipe is courtesy of my sister-in-law, Ros Scott. I love this salad for many reasons: it is colourful, quick to prepare, super healthy and the dressing is to die for!
There are a number of ingredients in this recipe that are part of the top 100 healthiest foods list. First of all, we have the fresh local spinach that is readily available at markets this time of year. Spinach is among the top greens for folate, and it contains high amounts of vitamin A, iron, potassium, calcium, zinc, and selenium, which offers antioxidant protection and supports thyroid function.” See recipe here

“When I think of spring, lamb and asparagus come to mind! The Galloping Goose Sausage Co. in Metchosin makes excellent herbed lamb sausages. They are gluten- , MSG- and preservative free. We are fortunate here at the Deep Cove Market to be able to carry fresh asparagus from Raphael at Guités Farm on Oldfield Road. I’m a big fan of easy one-dish meals, so I have combined a number of items I carry here at the Market into one entrée. This dish could easily become gluten free by substituting the pasta with a rice pasta or quinoa. I also think the lemon cooking sauce would pair nicely with chicken if you are not a lamb fan. We carry farm-fresh, free-range, antibiotic-free chicken from Kildonan Farms located right here in North Saanich. - A year and a half in the making and the Westshore Town Centre is becoming more delicious by the minute! The first of its kind tater-tot shop, Totchos, has opened its doors with fanfare. Attributing the lengthy wait for the restaurant launch to implications involving labour shortages caused by the COVID-19 pandemic, Totchos co-owner, Ashley Reardon says the delayed launch has made all the difference to the early success of the business. It was insane. We were lined up outside the door on Friday (February 10th) when we opened. We had the tables flipping every half an hour to 45 minutes,” said Reardon. Having to close an hour early due to a shortage of food, Reardon tells Victoria Buzz the wave of support and welcome she and her husband have received at the Westshore Town Centre has helped them feel at home and further inspired them to run a business in Langford. “We moved out to Langford because it’s a quieter area but there’s less stuff going on for our kids. We are big kids so we kind of just brainstormed and we were like, let’s just do something fun,” says Reardon. Known as the only restaurant on Vancouver Island serving a delicious variety of tater-tot inspired meals, Totchos holds a deeper meaning to Reardon as a tribute to her late mother, Charlene, who passed away in October 2022. “She couldn’t see it open but she was really excited. Most of the recipes are hers and I learned all my cooking from her,” says Reardon. As a child, Reardon’s parents would infuse tater tots into meals with additional healthy ingredients to help inspire Reardon and her siblings to eat balanced meals. A concept that Reardon has passed onto her children, the new restaurateur tells Victoria Buzz that the realization of this business has come full circle as her eldest daughter encouraged her to pursue the business. “I was sitting with my oldest daughter one day and she’s like, mom if we ever can we should open a tater tot restaurant. I ended up getting a settlement, and we were just like, okay let’s try this,” says Reardon. For those curious about what’s offered on the menu, Reardon wants guests to know there’s a meal waiting for everyone. “We’re 90% gluten-free, there are only three things on our menu that isn’t gluten free. We also have plenty of vegan and keto options,” says Reardon.

Opening across from Winners / HomeSense in at Westshore Town Centre, Totchos will be serving up loaded tater tots, hand-helds (fancy tacos), snacks and soft serve ice cream, with lots of vegan, low-carb and no sugar options as well. “We are thrilled to announce the arrival of a brand-new retailer opening at Westshore Town Centre this Fall,” Marketing Manager Kelly McClure Marketing said in an email to Victoria Buzz. Totchos is locally owned and while no specific opening date was announced, it is slated to open this fall. “The owners are very excited to be opening this first-of-its-kind restaurant at Westshore Town Centre and to serve up delicious food and fun to the Westshore community,” said McClure. Even better, each table at the restaurant will be equipped with a built-in retro video gaming system for loads of family fun!

- A year and a half in the making and the Westshore Town Centre is becoming more delicious by the minute! The first of its kind tater-tot shop, Totchos, has opened its doors with fanfare. Attributing the lengthy wait for the restaurant launch to implications involving labour shortages caused by the COVID-19 pandemic, Totchos co-owner, Ashley Reardon says the delayed launch has made all the difference to the early success of the business. It was insane. We were lined up outside the door on Friday (February 10th) when we opened. We had the tables flipping every half an hour to 45 minutes,” said Reardon. Having to close an hour early due to a shortage of food, Reardon tells Victoria Buzz the wave of support and welcome she and her husband have received at the Westshore Town Centre has helped them feel at home and further inspired them to run a business in Langford. “We moved out to Langford because it’s a quieter area but there’s less stuff going on for our kids. We are big kids so we kind of just brainstormed and we were like, let’s just do something fun,” says Reardon. - A year and a half in the making and the Westshore Town Centre is becoming more delicious by the minute! The first of its kind tater-tot shop, Totchos, has opened its doors with fanfare. Attributing the lengthy wait for the restaurant launch to implications involving labour shortages caused by the COVID-19 pandemic, Totchos co-owner, Ashley Reardon says the delayed launch has made all the difference to the early success of the business. It was insane. We were lined up outside the door on Friday (February 10th) when we opened. We had the tables flipping every half an hour to 45 minutes,” said Reardon. Having to close an hour early due to a shortage of food, Reardon tells Victoria Buzz the wave of support and welcome she and her husband have received at the Westshore Town Centre has helped them feel at home and further inspired them to run a business in Langford. “We moved out to Langford because it’s a quieter area but there’s less stuff going on for our kids. We are big kids so we kind of just brainstormed and we were like, let’s just do something fun,” says Reardon. Known as the only restaurant on Vancouver Island serving a delicious variety of tater-tot inspired meals, Totchos holds a deeper meaning to Reardon as a tribute to her late mother, Charlene, who passed away in October 2022. “She couldn’t see it open but she was really excited. Most of the recipes are hers and I learned all my cooking from her,” says Reardon. As a child, Reardon’s parents would infuse tater tots into meals with additional healthy ingredients to help inspire Reardon and her siblings to eat balanced meals. A concept that Reardon has passed onto her children, the new restaurateur tells Victoria Buzz that the realization of this business has come full circle as her eldest daughter encouraged her to pursue the business. “I was sitting with my oldest daughter one day and she’s like, mom if we ever can we should open a tater tot restaurant. I ended up getting a settlement, and we were just like, okay let’s try this,” says Reardon. For those curious about what’s offered on the menu, Reardon wants guests to know there’s a meal waiting for everyone. “We’re 90% gluten-free, there are only three things on our menu that isn’t gluten free. We also have plenty of vegan and keto options,” says Reardon.

Opening across from Winners / HomeSense in at Westshore Town Centre, Totchos will be serving up loaded tater tots, hand-helds (fancy tacos), snacks and soft serve ice cream, with lots of vegan, low-carb and no sugar options as well. “We are thrilled to announce the arrival of a brand-new retailer opening at Westshore Town Centre this Fall,” Marketing Manager Kelly McClure Marketing said in an email to Victoria Buzz. Totchos is locally owned and while no specific opening date was announced, it is slated to open this fall. “The owners are very excited to be opening this first-of-its-kind restaurant at Westshore Town Centre and to serve up delicious food and fun to the Westshore community,” said McClure. Even better, each table at the restaurant will be equipped with a built-in retro video gaming system for loads of family fun!
