The legendary home of the “Cadborosaurus” sea serpent, Cadboro Bay is a partially protected bay with the kind of long, sandy beaches that make for sublime summer swimming, strolling and boating. The park has a replica of the Cadborosaurus creature, said to be a relative of the Loch Ness Monster. Caddy, as it is known, usually allows itself to be seen once or twice a year. Cadboro Bay’s beaches are well-equipped for family outings with picnic facilities, public washrooms and a children’s playground. Pack a snack from Pepper’s and enjoy!

About Jorge

While pursuing a poli-sci degree, Jorge (pronounced ‘Hor-he’) was inspired to start his own business. What better motivation than to share the recipes that his grandmother developed for his celiac father.  CHURROS & MOR was born!

Yes! Celiac Disease and the gluten-free diet literally run through Jorge’s veins. His niece in England also shares the diagnosis. Her family has chosen a vegan lifestyle, so Jorge knows first hand how challenging it is to find delicious gluten-free AND vegan delicacies!

For years, Jamie Lynn has been obsessed with owning her own ice cream trailer. Lucky for us, she made her dreams – and ours – come true! Catch her before she flies away to chase another dream – obtaining her pilots’s license!

Jamie and her husband Vinny, a heavy-duty mechanic by trade, built the ice cream trailer from scratch, then decorated it with images ofd beautiful berries. You can’t miss it at Departure Bay Beach in Nanaimo or at a host of special events. Look for the line up!

  • ‘Unique Cake (gluten) Waffle Cones’ and ‘Gluten-Friendly Waffle Cones’ are dairy-free, egg-free and ‘vegan-friendly.’
  • Made in a facility in Metro Vancouver that has been making waffle cones since 1982.
  • Gluten-friendly cones are made with documented to be gluten-free rice flour, arrowroot, soy lecithin, canola oil & cellulose.
  • Shared equipment is blown off and thoroughly scrubbed between gluten and gluten-friendly production.
  • Packaging is colour-coded to clearly identify gluten & gluten-friendly cones.

About the Dough

  • Made with spring water, psyllium husk, ground flax, sorghum flour, tapioca flour, natural levain (wild yeast) and sea salt
  • Good for 21 days in the fridge, 3 months in the freezer
  • Remove dough from fridge and let it reach room temperature
  • Dough will be workable, easy to roll but a bit more sensitive to tearing than gluten dough
  • Roll out with a dusting of gluten-free flour or between two pieces of parchment paper
  • Crust can be par-baked for 3-5 minutes at 450˚F or for 7-10 minutes all dressed, until cheese browns
  • Par-baked crusts can be frozen until needed.

Using natural wild levain and a base of psyllium husk, flax and water, the dough is fermented for 12-18 hours to allow phytic acid breakdown and real flavor development. The bread is then baked on a stone to create rustic loaves with appealing crust.

The Art of Slow Food  does not use common gluten-free ingredients such as xanthan gum, agar agar, potato starch, rice flour or other high-starch ingredients. The bread is made with only 7 simple, organic ingredients, in order of predominance: Spring water, psyllium husk, ground flax, sorghum flour, tapioca flour, natural levain (wild yeast) and sea salt.

As a result of slow fermentation, the carbohydrates and starches in the bread are broken down, creating a light, soft digestible bread. The psyllium husk and ground flax act as a digestive aid and provide a soft, chewy texture without gluten or added starches.

Sourdough selection includes Toasted Sesame, Plain, Kalamata Olive, Rosemary Poppyseed and on occasion, Cranberry Walnut!

Tanja Blondin,  Owner / Operator of B-glutenfreevictoria, has been baking for as long as she can remember.  Her German heritage continues to inform the food that she creates.

With hospitality in her DNA, Tanja has done it all from baking to catering,  always with the best in presentation.

When her daughter was born, Tanja started a cake business that allowed her to work from home. The business was so successful that it grew into a full catering and pastry shop in Ontario. From there, she went on to manage  restaurants, including the Starbucks that she transferred to in Sidney, to be closer to family.

Seeking a change from the coffee business, Tanja assumed a position in the bakery department of Sidney Thrifty Foods. It was around this time that she began experiencing health problems that lead her, and her daughter, to be diagnosed with celiac disease. Her employer tried to accommodate her condition with a move to the cake decorating department, but the proximity to airborne gluten flour was too much for her.  Tanja had to resign, but that does not mean she stopped baking. Their loss was our gain!

What to do with decades of experience baking European pastries?  Tanja reimagined them using gluten-free, organic ingredients, freshly milled at the dedicated gluten-free Millstone Farm Organics in North Saanich:

Owner of the Oldest Pub in British Columbia, the Six Mile Pub + Eatery, David considers himself an accidental restauranteur.

He was introduced to the restaurant industry by his brother-in-law, Joseph Heng, only as a means to pay for his studies at the University of Victoria. David had always aspired to become a clinical psychologist.

Chandlers Restaurant, a member of the Keg family of restaurants at the time, and where David was working as a bistro cook, offered him a full-time kitchen management position. David took the job, anticipating that he would eventually return to fulfill his dream of becoming a psychologist.

Before long, this accidental choice of livelihood had become a career. Ultimately, both the work of a clinical psychologist care of people, which had always been David’s impetus anyways.

Over the decades since, David has schooled himself across a wide spectrum of the industry – from managing corporate restaurants such as the Keg and Milestones, to running the food and beverage operations for a cruise ship, operating a tiny mom-and-pop wrap and smoothie health bar, and for the past 20+ years, owning and actively operating the oldest pub in BC, the Six Mile Pub + Eatery in Victoria. His focus on warm, authentic hospitality and wholesome foods has earned this heritage pub a “Best Pub to Take a Kid” award, as well as consecutive “Readers’ Choice Awards for Best Pub in Victoria”.

When he is not serving guests at his Pub, David along with his wife, Fancy, serves the community, with their Fancy + David Foundation, which funds charities, programs and activities that help steer local youths towards positive, productive pathways.

While he does not profess to know everything about the industry; In fact, he claims to know very little, he has been conducting weekly classes at his pub, to share what little he knows with his many young, passionate staff who are building careers in our industry.

About Jorge

While pursuing a poli-sci degree, Jorge (pronounced ‘Hor-he’) was inspired to start his own business. What better motivation than to share the recipes that his grandmother developed for his celiac father.  CHURROS & MOR was born!

The legendary home of the “Cadborosaurus” sea serpent, Cadboro Bay is a partially protected bay with the kind of long, sandy beaches that make for sublime summer swimming, strolling and boating. The park has a replica of the Cadborosaurus creature, said to be a relative of the Loch Ness Monster. Caddy, as it is known, usually allows itself to be seen once or twice a year.   • TESTIMONIAL:  Just had dinner last night at the 6 Mile Pub on Old Island Highway. Wow! I have eaten here before but was amazed again at the GF menu selection, presentation, deliciousness, and the feeling of safety eating there. We went with another family and it was so awesome that I could share food with others who easily ordered GF even though they aren’t Celiac because there is just so many good things to choose from. The calamari is the best I have had anywhere. All the desserts were gluten free. How is this possible I wondered? I asked the waitress and she told me the chef is Celiac! We need more Celiac chefs that are this creative!! This has got to be best restaurant for dinner for Celiacs in the Victoria area.

David Wong, Six Mile PubOur Gluten-Free Hero & Industry Pioneer, David Wing is a 2023 BC Restaurant Hall of Fame Inductee! !

Owner of the Oldest Pub in British Columbia, the Six Mile Pub + Eatery, David considers himself an accidental restauranteur.

He was introduced to the restaurant industry by his brother-in-law, Joseph Heng, only as a means to pay for his studies at the University of Victoria. David had always aspired to become a clinical psychologist.

Chandlers Restaurant, a member of the Keg family of restaurants at the time, and where David was working as a bistro cook, offered him a full-time kitchen management position. David took the job, anticipating that he would eventually return to fulfill his dream of becoming a psychologist.

Before long, this accidental choice of livelihood had become a career. Ultimately, both the work of a clinical psychologist care of people, which had always been David’s impetus anyways.

Over the decades since, David has schooled himself across a wide spectrum of the industry – from managing corporate restaurants such as the Keg and Milestones, to running the food and beverage operations for a cruise ship, operating a tiny mom-and-pop wrap and smoothie health bar, and for the past 20+ years, owning and actively operating the oldest pub in BC, the Six Mile Pub + Eatery in Victoria. His focus on warm, authentic hospitality and wholesome foods has earned this heritage pub a “Best Pub to Take a Kid” award, as well as consecutive “Readers’ Choice Awards for Best Pub in Victoria”.

When he is not serving guests at his Pub, David along with his wife, Fancy, serves the community, with their Fancy + David Foundation, which funds charities, programs and activities that help steer local youths towards positive, productive pathways.

While he does not profess to know everything about the industry; In fact, he claims to know very little, he has been conducting weekly classes at his pub, to share what little he knows with his many young, passionate staff who are building careers in our industry.

At this stage of his accidental career, is to give a little back to the industry that has given him so much!
