Gluten-Free Flat Bread
Ingredients

  • 1 cup (285 g) full-fat greek yogurt
  • 2 cups (250 g) gluten-free flour blend, plus more for flouring
  • 2 teaspoons baking powder
  • salt as desired

Preparation

  1. In a large bowl, mix together the yogurt, gluten-free flour blend, baking powder, and salt until a dough forms.
  2. Transfer the dough to a lightly-floured surface and flatten into an 8-inch (20 cm) disk.
  3. Cut the disk into 4 equal parts and flatten each part to about ¼ inch (6 mm) thick.
  4. Very carefully transfer the dough pieces to a nonstick pan preheated over medium heat.
  5. Cook each side of the flatbread until well browned.
  6. Enjoy!

Gluten-Free Bread Sticks

Ingredients

  • 1 cup (285 g) full-fat greek yogurt
  • 2 cups (250 g) gluten-free flour blend, plus more for flouring
  • 2 teaspoons baking powder
  • salt, as desired
  • 2 tablespoons oil
  • 1 tablespoon Italian seasoning

Preparation

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, mix together the yogurt, gluten-free flour blend, baking powder, and salt until a dough forms.
  3. Transfer the dough to a lightly-floured surface and flatten into an 8-inch (20-cm) disk.
  4. Cut the disk into 6 equal parts and roll each part into 8-inch (20-cm) logs.
  5. Transfer the logs to a parchment-lined baking sheet.
  6. In a small bowl, combine the oil and Italian seasoning. Use a pastry brush to brush the oil mixture over the breadsticks.
  7. Bake for 15 minutes, until the breadsticks are set and just starting to brown.
  8. Enjoy!
