As co-owners of the Old Town (Wheat) Bakery at 510 1st Avenue in Ladysmith, Vancouver Island, Kate Cram and husband Geoff could easily be considered local celebrities!  As an ‘Associate with the Culinary Institute of America‘ who also undertook to certify as a Red Seal Baker in Canada, Kate is truly baker’s baker!

Two children later, Kate and Geoff’s young sons began to experience persistent health issues that had them resorting to a gluten-free diet in search of relief.  The improvement was nothing short of remarkable and a heads up to Kate that gluten may be taking a toll on her own health. The couple found themselves at a professional and personal cross roads with Kate contemplating the end of a career she loved, and their children unable to  set foot within the family business.

That’s how Wild Poppy Bakery and Bistro was born!

Every THIRD FRIDAY, she hosts a ‘virtual office hour’ on the Canadian Celiac Association Facebook Group  from 12 – 1pm Pacific Standard Time / 3pm – 4pm Eastern Standard Time.

Each office hour will have a theme, but the topic will always be gluten-free! She is eager to answer any questions you may have about the diet or the disease. If not already a member of this friendly & informative facebook group, just ask to join!

  • “When I was going through university, I was exhausted, ALL the time.  I had to drag myself out to hang out with friends, and if I had it my way I would have spent most days in bed sleeping.  It was not unknown for me to sleep 12-16 hours a day.  Call me crazy, but I related it all to the busy-ness of school.  I was even checked for anemia at one point (common with celiacs) and I was ‘fine.’  
  • The symptoms continued through school and the brain fog was undeniable.  I distinctly remember during my dietetic internship (like a medical residency except everything is nutrition based) at Kelowna General Hospital sitting in the office, charting on a patient and, literally, feeling like my brain was so fuzzy that I could barely keep my eyes from nodding off.  It was awful. 
  • Another thing I didn’t pay much attention to, was bowels.  I was always constipated.  Never the other way around. Never.  And, I also remember mentioning this to my gastroenterologist just before the endoscopy and he said ‘oh, well with your very low antibody levels and constipation, there is a very low chance that you are actually celiac but we will proceed with the endoscopy since you’re prepped and ready to go.’  
  • The piece of paper I received after the endoscopy said to follow up with my GP.  I did follow up with my GP and the report came back positive for celiac disease.  My GP said “well, you’re celiac.  But, you’re a dietitian, right, so this should be easy for you!”  
  • Perhaps I had a leg up in the nutrition part of it, but I think we all know that the gluten free diet is not a walk in the park.  And, although, I am so appreciative of the medical care I received, it did open my eyes to the lack of knowledge within the medical community when it came to celiac disease and the lack of support offered to individuals with celiac disease.  

That’s how Healthbean Nutrition was born!

  • The piece of paper I received after the endoscopy said to follow up with my GP.  I did follow up with my GP and the report came back positive for celiac disease.  My GP said “well, you’re celiac.  But, you’re a dietitian, right, so this should be easy for you!”  
  • Perhaps I had a leg up in the nutrition part of it, but I think we all know that the gluten free diet is not a walk in the park.  And, although, I am so appreciative of the medical care I received, it did open my eyes to the lack of knowledge within the medical community when it came to celiac disease and the lack of support offered to individuals with celiac disease.

  • “When I was going through university, I was exhausted, ALL the time.  I had to drag myself out to hang out with friends, and if I had it my way I would have spent most days in bed sleeping.  It was not unknown for me to sleep 12-16 hours a day.  Call me crazy, but I related it all to the busy-ness of school.  I was even checked for anemia at one point (common with celiacs) and I was ‘fine.’  
  • The symptoms continued through school and the brain fog was undeniable.  I distinctly remember during my dietetic internship (like a medical residency except everything is nutrition based) at Kelowna General Hospital sitting in the office, charting on a patient and, literally, feeling like my brain was so fuzzy that I could barely keep my eyes from nodding off.  It was awful. 
  • Another thing I didn’t pay much attention to, was bowels.  I was always constipated.  Never the other way around. Never.  And, I also remember mentioning this to my gastroenterologist just before the endoscopy and he said ‘oh, well with your very low antibody levels and constipation, there is a very low chance that you are actually celiac but we will proceed with the endoscopy since you’re prepped and ready to go.’

  • The symptoms continued through school and the brain fog was undeniable.  I distinctly remember during my dietetic internship (like a medical residency except everything is nutrition based) at Kelowna General Hospital sitting in the office, charting on a patient and, literally, feeling like my brain was so fuzzy that I could barely keep my eyes from nodding off.  It was awful. 
  • Another thing I didn’t pay much attention to, was bowels.  I was always constipated.  Never the other way around. Never.  And, I also remember mentioning this to my gastroenterologist just before the endoscopy and he said ‘oh, well with your very low antibody levels and constipation, there is a very low chance that you are actually celiac but we will proceed with the endoscopy since you’re prepped and ready to go.’  
  • The piece of paper I received after the endoscopy said to follow up with my GP.  I did follow up with my GP and the report came back positive for celiac disease.  My GP said “well, you’re celiac.  But, you’re a dietitian, right, so this should be easy for you!”  
  • Perhaps I had a leg up in the nutrition part of it, but I think we all know that the gluten free diet is not a walk in the park.  And, although, I am so appreciative of the medical care I received, it did open my eyes to the lack of knowledge within the medical community when it came to celiac disease and the lack of support offered to individuals with celiac disease.

  • “When I was going through university, I was exhausted, ALL the time.  I had to drag myself out to hang out with friends, and if I had it my way I would have spent most days in bed sleeping.  It was not unknown for me to sleep 12-16 hours a day.  Call me crazy, but I related it all to the busy-ness of school.  I was even checked for anemia at one point (common with celiacs) and I was ‘fine.’

Kate Cram is a married mother of 3 boys. She grew up on Vancouver Island, moving to New York after high school to attend The Culinary Institute of America, in Hyde Park.

Upon graduating with an associate degree in Culinary Arts, she returned to the island to pursue a career in fine dining.

In August of 1999 she and her family, opened her first restaurant, The Sunflower Café.

In 2003, she opened Old Town Bakery in Ladysmith. The Old Town Bakery became very successful and is widely known for its cinnamon buns.

Happily, immersed in baking. Kate became a Red Seal Baker in 2008. In 2013, after experiencing many health challenges, Kate and her husband Geoff, opened Wild Poppy Bistro, a restaurant specializing in thoughtfully sourced and prepared foods with an emphasis on gluten free and vegan options.

In 2018, Kate became a Registered Holistic Nutritionist which aided in menu development and helped her to understand that food itself is natures best medicine.

Kate Cram is a married mother of 3 boys. She grew up on Vancouver Island, moving to New York after high school to attend The Culinary Institute of America, in Hyde Park.

Upon graduating with an associate degree in Culinary Arts, she returned to the island to pursue a career in fine dining.

In August of 1999 she and her family, opened her first restaurant, The Sunflower Café.

In 2003, she opened Old Town Bakery in Ladysmith. The Old Town Bakery became very successful and is widely known for its cinnamon buns.

Happily, immersed in baking. Kate became a Red Seal Baker in 2008. In 2013, after experiencing many health challenges, Kate and her husband Geoff, opened Wild Poppy Bistro, a restaurant specializing in thoughtfully sourced and prepared foods with an emphasis on gluten free and vegan options.

In 2018, Kate became a Registered Holistic Nutritionist which aided in menu development and helped her to understand that food itself is natures best medicine.

Kate Cram appears in the Island Eats Cookbook featuring 41 chefs and establishments from Vancouver Island and surrounding Gulf Islands. Copies available in store.

Kate Cram Wild Poppy MarketMeet the Chef
Kate Cram is a married mother of 3 boys. She grew up on Vancouver Island, moving to New York after high school to attend The Culinary Institute of America, in Hyde Park.

Upon graduating with an associate degree in Culinary Arts, she returned to the island to pursue a career in fine dining.

In August of 1999 she and her family, opened her first restaurant, The Sunflower Café.

In 2003, she opened Old Town Bakery in Ladysmith. The Old Town Bakery became very successful and is widely known for its cinnamon buns.

Happily, immersed in baking. Kate became a Red Seal Baker in 2008. In 2013, after experiencing many health challenges, Kate and her husband Geoff, opened Wild Poppy Bistro, a restaurant specializing in thoughtfully sourced and prepared foods with an emphasis on gluten free and vegan options.

In 2018, Kate became a Registered Holistic Nutritionist which aided in menu development and helped her to understand that food itself is natures best medicine.

Kate Cram appears in the Island Eats Cookbook featuring 41 chefs and establishments from Vancouver Island and surrounding Gulf Islands. Copies available in store.
