Wescana Foods Oat Flour Tortilla Recipe

INGREDIENTS

1 1/2 cups (gluten-free) all-purpose flour
1 TSP ground cinnamon
1/2 TSP blog soda
1/2 TSP salt
1 cup unsalted butter, slightly softened
1 cup packed light brown sugar
1/2 cup white granulated sugar
2 large eggs
1 1/2 TSP vanilla extract
3 cups Wescana Foods Gluten-FreeRolled Oats
1 cup chocolate chips or combination of chocolate chips, walnuts and / or raisins.

PROCEDURE

Preheat the oven to 350˚F
Line 13 x 18 inch baking sheets with parchment paper or use silicone baking mats
In a mixing bowl, whisk together flour, cinnamon, baking soda, baking powder and salt for 20 seconds
In the bowl of an electric mixer fitted with a paddle attachment, cream together butter, brown sugar white sugar until combined
Mix in eggs, one at a time, until well blended
Add flour mixture and mix until just combined.
Mix in oats and chocolate chips, walnuts and / or raisins.
Scoop dough out and shape into 1 1/2 inch balls. Space 2 inches apart.
Bake 12 – 14 minutes or until golden brown on edges. Centre should appear unbaked.
Allow to cool no baking sheet for a few minutes, then transfer to a wire rack to cool completely.
