El Faro Scone Recipe

Ingredients

  • 2 cups El Faro Gluten Free Flour
  • 2 TSP baking powder
  • 1/2 cup cold butter
  • 1/4 cup sugar
  • 2 eggs
  • 140ml whipping cream (you might need slightly more (1 – 2 TBSP) to make sure the dough is well mixed but not too wet)
  • Fruit
    • lemon (1 TBSP zest + juice of one lemon) or
    • fresh cranberries (1/3-1/2 cup) or fruit of your choosing

Instructions

  1. Preheat oven to 400F
  2. Mix the flour, baking powder, butter and sugar together in a bowl, until a crumb is formed (I use a pastry cutter to get the butter ground in fine)
  3. In a separate bowl, whisk the eggs and cream together
  4. Add the liquid to the crumb mixture
  5. Roughly mix the dough
  6. Add the lemon juice, lemon rind and cranberries
  7. Continue to mix the dough, until it is smooth
  8. Form into 8 equal rounds by hand
  9. Gently cream wash the top of the scones
  10. Bake in the oven for 15 – 20 minutes until golden brown (I’ve done it with a gas oven for 29 minutes but our oven may have been a slightly lower temp than 400F)
  11. Cool before serving with your favourite topping
