Benjamin’s Bites’ Back Story
Benjamin’s Bites Cookies were borne out of necessity. At fourteen months, Tony and Debbie discovered that their son, Benjamin, had multiple food allergies. It was heartbreaking and frightening to see his body react with real physical symptoms.
After eliminating everything that Benjamin’s body was reacting to, the next step was to eat as many whole foods as possible. Debbie had always been a “label reader” but became increasingly concerned when she picked up product after product and realized, “No, he can’t have this.” It was challenging, but after searching they found a variety of foods which were safe for Benjamin. The one thing we were unable to find was a cookie which tasted both homemade and was also appealing to those without food intolerances. The family had some tough critics when it came to sweets. They were the perfect test subjects!
Like Debbie’s Grandma and Mom, I loved to bake. She challenged herself to create a cookie that contained no gluten, eggs, soy, dairy, peanuts, tree nuts, or sulphites. The flour blends found in the stores just didn’t seem to have the taste she was searching for. Why not mill her own, she thought? She purchased a home grain mill and, after many combinations of grains, came up with ‘Benjamin’s Bites Flour Blend.’
Debbie began to bake cookies and bake cookies and bake cookies! After almost two years of test baking (and some real hockey pucks), she had a cookie that was free of gluten, eggs, soy, dairy, peanuts, tree nuts, and sulphites. The best thing? It tasted really good.
Our mission has never changed: to create a gluten free/allergy friendly cookie that tasted homemade and used familiar and pronounceable ingredients.
They were developed for people who can’t eat a regular cookie due to allergies or gluten sensitivities, but the upshot is that people without food intolerances are enjoying them, too! We encourage everyone to taste Benjamin’s Bites Cookies, always checking the ingredients before sharing. We do have some tricks up our sleeves, so be on the lookout for more Benjamin’s Bites products soon.

Puff Pastry Tips from Dale!
- “If you have time, it’s best to thaw puff pastry overnight in the fridge.
- If you don’t have time, thaw it on the counter until it’s pliable enough to unfold without cracking, but still cool to the touch. Keep a close eye on it — if the dough feels very limp, refrigerate it for 30 minutes to help it firm up again.
- One of the biggest mistakes you can make is leaving it on the counter for too long. A room-temperature atmosphere will cause the puff pastry to wilt and become floppy. That, in turn, will make the layers stick, and render it almost impossible to work with. If your puff pastry gets too soft, return it to the fridge for 20 to 30 minutes before moving forward.
- Lightly roll out the puff pastry: Dust the top of the puff with just a little GF flour, then use a rolling pin to lightly roll. Puff pastry should be rolled out to approx. 4-5 mm depth.
- Follow any puff pastry recipe, remembering that ALL pastry (gluten-free or not) bakes off flakiest when chilled for a short time before baking in a hot oven ie 10-15 min in freezer first after making your ‘creation.’
- If you’re making a filled pastry, like a pot pie, for example, cut a few vents in the dough so hot air can escape and circulate as it bakes. If you skip this step, and you’ll have a soggy interior.
- We generally egg wash pastry before baking to give it that yummy golden colour
- A very general rule for baking the puff pastry is the following – bear in mind that oven temperatures vary.
- Set the oven to 200° C (400° F – gas 6) and bake in the middle of the oven for 20 minutes to 25 minutes. Check after 20 minutes as it’s easy to burn the edges from cooking for too long.
- Scraps can be gathered up and be reused. Make sure that scraps are layered on top of each other – not scrunched up into a ball, before re-rolling.”

The legendary home of the “Cadborosaurus” sea serpent, Cadboro Bay is a partially protected bay with the kind of long, sandy beaches that make for sublime summer swimming, strolling and boating. The park has a replica of the Cadborosaurus creature, said to be a relative of the Loch Ness Monster. Caddy, as it is known, usually allows itself to be seen once or twice a year. The BC Chapter of the Chapter of the Canadian Celiac Association is pleased to announce a Christmas Crafts & Cookies Meet Up on Thursday December 12th 6-8pm at BC Children’s Hospital, 4480 Oak Street, Vancouver. See Map.
This group is for children ages 5 – 12 and it is not a support group, but rather is a place for positive peer relations for kids and their parents.
The cookies and decorating supplies have been generously donated by Jenna – owner of Delish Gluten Free Bakery.

Puff Pastry Tips from Dale!
- “If you have time, it’s best to thaw puff pastry overnight in the fridge.
- If you don’t have time, thaw it on the counter until it’s pliable enough to unfold without cracking, but still cool to the touch. Keep a close eye on it — if the dough feels very limp, refrigerate it for 30 minutes to help it firm up again.
- One of the biggest mistakes you can make is leaving it on the counter for too long. A room-temperature atmosphere will cause the puff pastry to wilt and become floppy. That, in turn, will make the layers stick, and render it almost impossible to work with. If your puff pastry gets too soft, return it to the fridge for 20 to 30 minutes before moving forward.
- Lightly roll out the puff pastry: Dust the top of the puff with just a little GF flour, then use a rolling pin to lightly roll. Puff pastry should be rolled out to approx. 4-5 mm depth.
- Follow any puff pastry recipe, remembering that ALL pastry (gluten-free or not) bakes off flakiest when chilled for a short time before baking in a hot oven ie 10-15 min in freezer first after making your ‘creation.’
- If you’re making a filled pastry, like a pot pie, for example, cut a few vents in the dough so hot air can escape and circulate as it bakes. If you skip this step, and you’ll have a soggy interior.
- We generally egg wash pastry before baking to give it that yummy golden colour
- A very general rule for baking the puff pastry is the following – bear in mind that oven temperatures vary.
- Set the oven to 200° C (400° F – gas 6) and bake in the middle of the oven for 20 minutes to 25 minutes. Check after 20 minutes as it’s easy to burn the edges from cooking for too long.

- spread on your favourite burger (you’ll never use ketchup again)
- serve up on a fresh (gluten-free) baguette

- toss into pasta with some fresh parmesan shavings
- add to your homemade soup to elevate it to a whole new level
- eat it all by itself right out of the jar. It should come with a warning on the label: “highly addictive.”

“I have to be honest here and tell you that this recipe is courtesy of my sister-in-law, Ros Scott. I love this salad for many reasons: it is colourful, quick to prepare, super healthy and the dressing is to die for!
There are a number of ingredients in this recipe that are part of the top 100 healthiest foods list. First of all, we have the fresh local spinach that is readily available at markets this time of year. Spinach is among the top greens for folate, and it contains high amounts of vitamin A, iron, potassium, calcium, zinc, and selenium, which offers antioxidant protection and supports thyroid function.” See recipe here

“When I think of spring, lamb and asparagus come to mind! The Galloping Goose Sausage Co. in Metchosin makes excellent herbed lamb sausages. They are gluten- , MSG- and preservative free. We are fortunate here at the Deep Cove Market to be able to carry fresh asparagus from Raphael at Guités Farm on Oldfield Road. I’m a big fan of easy one-dish meals, so I have combined a number of items I carry here at the Market into one entrée. This dish could easily become gluten free by substituting the pasta with a rice pasta or quinoa. I also think the lemon cooking sauce would pair nicely with chicken if you are not a lamb fan. We carry farm-fresh, free-range, antibiotic-free chicken from Kildonan Farms located right here in North Saanich. Tanja Blondin, Owner / Operator of B-glutenfreevictoria, has been baking for as long as she can remember. Her German heritage continues to inform the food that she creates.
With hospitality in her DNA, Tanja has done it all from baking to catering, always with the best in presentation.
When her daughter was born, Tanja started a cake business that allowed her to work from home. The business was so successful that it grew into a full catering and pastry shop in Ontario. From there, she went on to manage restaurants, including the Starbucks that she transferred to in Sidney, to be closer to family.
Seeking a change from the coffee business, Tanja assumed a position in the bakery department of Sidney Thrifty Foods. It was around this time that she began experiencing health problems that lead her, and her daughter, to be diagnosed with celiac disease. Her employer tried to accommodate her condition with a move to the cake decorating department, but the proximity to airborne gluten flour was too much for her. Tanja had to resign, but that does not mean she stopped baking. Their loss was our gain!
What to do with decades of experience baking European pastries? Tanja reimagined them using gluten-free, organic ingredients, freshly milled at the dedicated gluten-free Millstone Farm Organics in North Saanich:

Tanja Blondin, Owner / Operator of B-glutenfreevictoria, has been baking for as long as she can remember. Her German heritage continues to inform the food that she creates.
With hospitality in her DNA, Tanja has done it all from baking to catering, always with the best in presentation.
When her daughter was born, Tanja started a cake business that allowed her to work from home. The business was so successful that it grew into a full catering and pastry shop in Ontario. From there, she went on to manage restaurants, including the Starbucks that she transferred to in Sidney, to be closer to family.
Seeking a change from the coffee business, Tanja assumed a position in the bakery department of Sidney Thrifty Foods. It was around this time that she began experiencing health problems that lead her, and her daughter, to be diagnosed with celiac disease. Her employer tried to accommodate her condition with a move to the cake decorating department, but the proximity to airborne gluten flour was too much for her. Tanja had to resign, but that does not mean she stopped baking. Their loss was our gain!
What to do with decades of experience baking European pastries? Tanja reimagined them using gluten-free, organic ingredients, freshly milled at the dedicated gluten-free Millstone Farm Organics in North Saanich:

Jamie and her husband Vinny, a heavy-duty mechanic by trade, built the ice cream trailer from scratch, then decorated it with images ofd beautiful berries. You can’t miss it at Departure Bay Beach in Nanaimo or at a host of special events. Look for the line up!

- Gluten-free, vegan, vanilla soft serve is made with coconut oil and Nora’s Creamy Cashew Milk.
- Mizu dedicates a scooper, an auger and freezer for vegan, dairy-free soft serve.

- Made in a facility in Metro Vancouver that has been making waffle cones since 1982.
- Gluten-friendly cones are made with documented to be gluten-free rice flour, arrowroot, soy lecithin, canola oil & cellulose.
- Shared equipment is blown off and thoroughly scrubbed between gluten and gluten-friendly production.
- Packaging is colour-coded to clearly identify gluten & gluten-friendly cones.
The Trailer!
- On the trailer, gluten-friendly cones are stored in a sealed, labelled bin, entirely separate from gluten cones.
- When you make your dietary needs known upon ordering, staff will wash their hands and put on clean gloves before handling the cone.
