Puff Pastry Tips from Dale! 

  • “If you have time, it’s best to thaw puff pastry overnight in the fridge.
  • If you don’t have time, thaw it on the counter until it’s pliable enough to unfold without cracking, but still cool to the touch. Keep a close eye on it — if the dough feels very limp, refrigerate it for 30 minutes to help it firm up again.
  • One of the biggest mistakes you can make is leaving it on the counter for too long. A room-temperature atmosphere will cause the puff pastry to wilt and become floppy. That, in turn, will make the layers stick, and render it almost impossible to work with. If your puff pastry gets too soft, return it to the fridge for 20 to 30 minutes before moving forward.
  • Lightly roll out the puff pastry: Dust the top of the puff with just a little GF flour, then use a rolling pin to lightly roll. Puff pastry should be rolled out to approx. 4-5 mm depth.
  • Follow any puff pastry recipe, remembering that ALL pastry (gluten-­free or not) ­ bakes off flakiest when chilled for a short time before baking in a hot oven ie 10-15 min in freezer first after making your ‘creation.’

Kids Meet Up Group @ Kids Meet Up

celiac summer camp WPThe Vancouver Chapter of the Canadian Celiac Association is pleased to announce that a Kids Meet Up Group will convene on Tuesday, June 18th from 6:00 p.m. – 8:00 p.m at BC Children’s Hospital, 4480 Oak Street, Vancouver in Room KO – 155. See Map.

The evening will involve crafts and/or other activities for the kids as well as a visit from some of the hospital’s therapy dogs. We hope these activities will help get us all chatting and getting to know each other better.

This group is for children ages 5 – 12 and it is not a support group, but rather is a place for positive peer relations for kids and their parents.

There will be no cost for members. Non-members are welcome and are asked to contribute $5 for the cost of materials.

This is a free-from food event. Please refrain from bringing snacks or food as we want the group to be inclusive of those with food allergies & sensitivities

celiac summer camp WPThe Vancouver Chapter of the Canadian Celiac Association is pleased to announce that a Kids Meet Up Group will convene on Monday, October 7 from 6:00 p.m. – 8:00 p.m at BC Children’s Hospital, 4480 Oak Street, Vancouver. See Map.

The evening will involve crafts and/or other activities for the kids as well as a visit from some of the hospital’s therapy dogs. We hope these activities will help get us all chatting and getting to know each other better.

  • On July 8th, Prashant “Bob” Unnikrishnan and his wife Lathika quietly opened the doors to Dosa Paragon, a south Indian restaurant that is one of its kind in Victoria, and perhaps all of Vancouver Island. Unlike other East Indian eateries in town, this restaurant specializes in cuisine local to the south Indian state of Kerala and everything on the menu is made from scratch by the husband-and-wife duo. Bob, who has lived in Victoria for the past 6 years, brings his dishes straight from India after having worked in major cities like Mumbai, Chennai and Bangalore. Before opening Dosa Paragon, he worked as a chef at several restaurants around town including Irish Times Pub, John’s Place, and Varsha Indian Kitchen.
  • Some of their highlights include the Masala Dosa (a rice crepe stuffed with spiced potato), their Onion and Cilantro Uthappam (a savoury pancake topped with onion and cilantro), and for meat eaters, an aromatic and flavourful Chicken Biryani (a spiced rice and chicken dish). Of course, no Indian meal is complete without a drink to go with it.
  • Those who prefer a cooler beverage may choose the thick, sweet concoction that is their mango smoothie. For those partial to hot drinks, the restaurant offers an authentic ‘masala chai’ or tea flavoured with a mix of spices and herbs.
  • While Bob and his wife have done practically nothing to advertise their new restaurant, the small eatery always has a steady stream of customers to keep them busy – a testament to the nearly addictive flavours and aromas emanating from Dosa Paragon. They have been so busy, in fact, that the owners have had to extend their business hours up to 9 p.m. to keep up with the demand.
  • “That’s our motivation,” said Bob when asked about how customers have been responding to his restaurant. “We just want to maintain that momentum as our main goal is customer satisfaction.”

MeeT Reshapes the Restaurant Industry 

Never before in The Celiac Scene’s history have I interviewed a restaurant so aware of its ingredients and so committed to serving the unique needs of each and every diner.

Food sensitivities are not just accommodated, they are celebrated!

MeeT Blanshard Grill CheeseBecause MeeT is committed to honouring the vegan and vegetarian choices of its diners, they visit with every supplier and build strong relationships with each one of them.

In the course of doing so, they become keenly aware which ingredients contain gluten along with a host of other food allergens. As a result, MeeT has effectively deconstructed the building blocks of food, and from there, created amazing meals in ways that meet almost any need – or want!

I spoke with Adam Twohey, former chef at MeeT’s Yaletown location in Vancouver, and now Victoria’s MeeT  Manager. He impressed me with his comprehensive knowledge of everything this 4-location offers. Be amazed!

  • Dedicated gluten-free deep fryer

  • All toppings used to dress meals are taken from fresh containers.
  • If there is any doubt about the GF status of an ingredient container, a fresh container is taken from their walk-in cooler.
  • Any loose flours used at MeeT are gluten free
  • MeeT uses Little Northern (vegan) brand bread and buns for their gluten-free burgers and sandwiches. 
  • MeeT Blanshard symbolsMeeT’s menu is notated to indicate which meals contain gluten and nuts. Many of these meals can still be adapted to gluten free. Ask your server – they are eager to help!
  • Please always assert your needs when ordering items that do not have a gluten notation to ensure that the kitchen can take necessary precautions.
  • OATS! The oat-intolerant can rejoice in knowing that oats are not incorporated into any of MeeT’s offerings! 
  • Oat milk however is used, and it should be noted that it is NOT gluten-free. 
  • Specially ordered meals may take longer to prepare and cook. Please be patient.

“We take food allergies very seriously. While we can never guarantee that our food is 100% free of allergens, there are several steps that we take to minimize the risk of cross-contamination. We are a peanut-free establishment, two of our deep fryers are used exclusively for gluten-free items, and our menu is egg and dairy free.”

“Our menu does make extensive use of ingredients such as nuts, wheat, and soy, but we take great care to process these items separately to avoid cross contamination. Please specify with your server the nature and severity of your allergy. Severe allergy bills do take us longer to prepare and cook.”

*Despite all of this, there is always a chance of human error in prepping or cooking of food, or cross-contaminated food from suppliers. For this reason, guests should be comfortable with these potential factors before eating with us. Learn more …

Tanja Blondin,  Owner / Operator of B-glutenfreevictoria, has been baking for as long as she can remember.  Her German heritage continues to inform the food that she creates.

With hospitality in her DNA, Tanja has done it all from baking to catering,  always with the best in presentation.

When her daughter was born, Tanja started a cake business that allowed her to work from home. The business was so successful that it grew into a full catering and pastry shop in Ontario. From there, she went on to manage  restaurants, including the Starbucks that she transferred to in Sidney, to be closer to family.

Seeking a change from the coffee business, Tanja assumed a position in the bakery department of Sidney Thrifty Foods. It was around this time that she began experiencing health problems that lead her, and her daughter, to be diagnosed with celiac disease. Her employer tried to accommodate her condition with a move to the cake decorating department, but the proximity to airborne gluten flour was too much for her.  Tanja had to resign, but that does not mean she stopped baking. Their loss was our gain!

What to do with decades of experience baking European pastries?  Tanja reimagined them using gluten-free, organic ingredients, freshly milled at the dedicated gluten-free Millstone Farm Organics in North Saanich:
