Nougat is a soft and sumptuous gluten-free treat whose origins date back to ancient Rome. Originally made with egg whites, honey and almonds, influences from the Orient (spices), Syria (Alep pistachios) and Greece (nuts) have resulted in the cosmopolitan, celiac-friendly candy we know and love today in Victoria, Vancouver Island, BC.
