A fabulous dessert innovation using Duinkerken’s All Purpose Cookie Mix. Be amazed!
- 1 package Duinkerken All Purpose Cookie Mix
- 1/4 cup melted butter
- 1 egg
- 1 TBSP milk
In a medium size mixing bowl, add cookie mix, melted butter, egg and milk. Mix until well blended and resembles crumb mixture. Press about half the crumb mixture in a greased 8 x 8 inch pan. Bake at 350˚ for approximately 12 minutes – then cool.
- Tip: For extra crumb for sprinkling, line a separate pan with parchment paper and add about 3 TBSP opf crumb mix and bake for 5 minutes or until brown.
- 1/2 cup cream cheese, softened
- 1/2 cup butter, softened
- 2 cups powdered icing sugar
Blend cream cheese and butter, folding in icing sugar. Spoon onto cooled baked cookie crumbs
- 1 – 19 ounce can crushed pineapple, very well drained
- 1 cup whipping cream
Whip the cream, fold in the drained pineapple. Spoon over filled crust. Top with toasted cookie crumbs. Refrigerate overnight.
