Afke’s Dutch Treat – a Burger Without a Cow
This week is a birthday week in our house so a celebration with food and drink is a must.
I subscribe to a Dutch newsletter just to keep my finger on the pulse of the food and agrarian sector in Europe. I came across upon a very cool government report that targets the sustainability of an increasingly superior (organic) vegetarian lifestyle for the health of the nation. Subsidies are available for innovative green house growers that produce superior food. The increase in cost is expected to be recovered by an increase in the export market. Great strides are made to grow chemical free food with innovative technology that does not damage the air, water and especially mineral rich soil.
Innocent family cereals like Cheerios, and a multitude of snack foods grown and processed in North America are now showing levels of glyphosates and neurotoxic pesticides that should not be served as breakfast. Europe has different standards and it will be interesting if the health of Dutch families will outshine North Americans in due time.
Could we try harder to have a back or front yard garden or simply spent some extra cash on organic fruit? You will be surprised how you can save money at local summer markets. My favorite brand new and very local Farmer John’s Market in Grindrod, BC will delight you with fresh produce, a good cappuccino, ice cream as well as robot milk maid that’s the Cat’s Meow or rather the Cow’s Moo. Their home-grown meat and cheese are very good quality, reasonably priced and trust worthy.
Here’s a recipe that I have translated from the Dutch newsletter. A burger that does not have a cow, or if you wish, a plant-based hearty snack to serve as appetizer.
Ingredients:
- 1 large onion, 1 – 2 garlic cloves, finely chopped
- 1 cup finely chopped mushrooms (shiitakes are great.)
- ½ cup (pure, gluten-free) oatmeal, blend to flour consistency
- 1 cup red lentils, cooked
- 1 ½ TBSP mustard
- 2 TBSP ketchup
- Salt, pepper
- 1 egg
Instructions:
- Sauté the onion, garlic and mushrooms in olive oil or butter. Add the remaining ingredients and mix by hand or with a fork until you can form 6 – 8 burgers or 20 – 30 “meatballs”. Bake at 325˚C for about 30 minutes.
