  • TESTIMONIAL:  Just had dinner last night at the 6 Mile Pub on Old Island Highway. Wow! I have eaten here before but was amazed again at the GF menu selection, presentation, deliciousness, and the feeling of safety eating there. We went with another family and it was so awesome that I could share food with others who easily ordered GF even though they aren’t Celiac because there is just so many good things to choose from. The calamari is the best I have had anywhere. All the deserts were gluten free. How is this possible I wondered? I asked the waitress and she told me the chef is Celiac!   • TESTIMONIAL:  Just had dinner last night at the 6 Mile Pub on Old Island Highway. Wow! I have eaten here before but was amazed again at the GF menu selection, presentation, deliciousness, and the feeling of safety eating there. We went with another family and it was so awesome that I could share food with others who easily ordered GF even though they aren’t Celiac because there is just so many good things to choose from. The calamari is the best I have had anywhere. All the deserts were gluten free. How is this possible I wondered? I asked the waitress and she told me the chef is Celiac! JDs sunshine jams AJD’s Sunshine Jams & Such – The Back Story

For more than thirty years, Janice followed and supported her husband, Danny while he served as an RCMP officer across Saskatchewan and British Columbia. In 2014, they chose to settle in the community of Sooke and explore what they could make of their ‘retirement’ years.

As it happened, in June of that year,  their son James was working for a chef in downtown Victoria who was searching for ‘locally-made’ jams to serve during High Tea. He wanted something that would outshine the competition. In short order,  Janice stepped up to provide the eight jams and two vinegars she had been making for years from family recipes. Soon enough, she began selling in Artisan’s Lane to passengers from the Coho and Clipper ferries and tourists from around the globe. Three years later, she and Danny have turned their retirement into a full-time, full-scale labour of love!

It was important to Janice that her products be enjoyed by customers following a gluten-free diet. Janice attributes her regained health to her 100% gluten-free diet after years of struggling with a host of auto-immune disorders. Not only does she love sharing celiac-friendly wares at farmer’s markets, she loves to share her journey with others who are seeking to improve their health through fresh, locally-grown whole food

The Screamin Brothers’ story grew in Canada but was born of tragedy.  In January 2010, the aftermath of the earthquake in Haiti was not far from the oldest of the Screamin Brothers’ thoughts.

900˚ Pizzeria EAT MagazineMy curiosity about 900˚ Wood-Fired Pizzeria was piqued when I read in the September Edition of Eat Magazine (page 27)  that the owner’s son was a celiac. Executive Chef and Owner, Adrian Ortiz-Mena was quoted as saying,

  • “I think the most innovative thing we have done is bringing really good gluten-free pizza to our customers. My son was diagnosed celiac when he was 5 years old … and he loved pizza. It broke my heart thinking that he could no longer have pizza, so I developed a gluten-free pizza dough just for him. It was a real challenge, a labour of love.”

CAUTION FOR CELIAC FOODIES: 900˚ Wood-Fired Pizzeria  is most assuredly a pizza lovers pizzeria. Gluten pizzas are thrown into the air with gusto, wheat flour coats the kitchen floor like dance dust and a fine coat of flour is evident on surfaces throughout the main preparation area. The Celiac Scene needed to learn more! 

I popped into this warm and inviting restaurant on a cold and rainy September night, hoping for the opportunity to speak to a chef or server about their gluten-free options.

I was pleasantly surprised when Adrian himself bounded from the back of the restaurant only too eager to share his son’s health journey and how he had worked at home to create a gluten-free crust that met his discerning chef standards. Using one of the best all-purpose gluten-free flour mixes on the market and few extra-special ingredients, he was able to create a crust that pleased his son – and one that Adrian believed would please his customers.

The details.

900˚ Pizzeria Adrian Ortiz-MenaAs our community well knows, it takes more that a crust to create a gluten-free pizza. Adrian set about to contact the manufacturers of every ingredient used in his entire operation to ensure that the components used in all of his pizzas were celiac-safe. Apart from the wheat flour used for his regular crusts and the garlic bread, every ingredient that 900˚ Wood-Fired Pizzeria in house is gluten-free.

What about the process?

Adrian brimmed with enthusiasm as he explained that gluten-free pizzas are entirely prepared in a dedicated gluten-free area, in a room away from the regular production area. Sauces and toppings are stored in dedicated containers and applied with dedicated utensils that are never used to dress regular pizzas.

When a gluten-free order is processed, the chef washes his hands – up to his elbows – before starting work on an the order. When complete, the  pizza is placed on a dedicated gluten-free pizza peel (handle) and transported to the 900˚ pizza oven where it is cooked to perfection.

Here’s where it gets complicated.

900˚ Pizzeria The Celiac SceneAt 900˚ Wood-Fired Pizzeria,  pizzas are cooked directly on the hearth of their single pizza oven, where other gluten pizzas have also been cooked.  The concern on my face prompted Adrian to escort me directly to the oven itself where he proceeded to sweep to the side the burnt, charcoal dust of the pizza crusts that had been cooked.

While Adrian whole heartedly agreed with me that deep frying food at a standard 325-375˚F does not destroy gluten, he maintains that incinerating to 900˚residual gluten crumbs and flour from previously cooked pizzas and then sweeping them aside, most assuredly does.

That said,  900˚ Wood-Fired Pizzeria  is pleased to cook gluten-free pizzas on sanitized pizza pans for any gluten-free diner’s peace of mind.

Final consideration.

900˚ Pizza The Celiac Scene900˚ Wood-Fired Pizzeria  is most assuredly a pizza lover’s pizzeria. Gluten pizza dough is thrown into the air with gusto, wheat flour coats the kitchen floor like dance dust and a fine coat of flour is evident on surfaces throughout the main preparation area.

That said after two  years’ serving gluten-free pizza, Adrian shared that there have been no reports from gluten-free diners that they had experienced gluten contamination.

As Adrian is quoted as saying in the EAT Magazine article, “I don’t think we really did anything new – we just did it better!”

I would have to agree: for celiac diners who are comfortable with these practices or those who avoid gluten as a lifestyle choice, 900˚ Wood-Fired Pizzeria sets the gluten-free bar as high as I have seen it on Vancouver Island.

JDs sunshine jams AJD’s Sunshine Jams & Such – The Back Story

For more than thirty years, Janice followed and supported her husband, Danny while he served as an RCMP officer across Saskatchewan and British Columbia. In 2014, they chose to settle in the community of Sooke and explore what they could make of their ‘retirement’ years.

As it happened, in June of that year,  their son James was working for a chef in downtown Victoria who was searching for ‘locally-made’ jams to serve during High Tea. He wanted something that would outshine the competition. In short order,  Janice stepped up to provide the eight jams and two vinegars she had been making for years from family recipes. Soon enough, she began selling in Artisan’s Lane to passengers from the Coho and Clipper ferries and tourists from around the globe. Three years later, she and Danny have turned their retirement into a full-time, full-scale labour of love!

It was important to Janice that her products be enjoyed by customers following a gluten-free diet. Janice attributes her regained health to her 100% gluten-free diet after years of struggling with a host of auto-immune disorders. Not only does she love sharing celiac-friendly wares at farmer’s markets, she loves to share her journey with others who are seeking to improve their health through fresh, locally-grown whole food

JDs sunshine jams AJD’s Sunshine Jams & Such – The Back Story

For more than thirty years, Janice followed and supported her husband, Danny while he served as an RCMP officer across Saskatchewan and British Columbia. In 2014, they chose to settle in the community of Sooke and explore what they could make of their ‘retirement’ years.

As it happened, in June of that year,  their son James was working for a chef in downtown Victoria who was searching for ‘locally-made’ jams to serve during High Tea. He wanted something that would outshine the competition. In short order,  Janice stepped up to provide the eight jams and two vinegars she had been making for years from family recipes. Soon enough, she began selling in Artisan’s Lane to passengers from the Coho and Clipper ferries and tourists from around the globe. Three years later, she and Danny have turned their retirement into a full-time, full-scale labour of love!

It was important to Janice that her products be enjoyed by customers following a gluten-free diet. Janice attributes her regained health to her 100% gluten-free diet after years of struggling with a host of auto-immune disorders. Not only does she love sharing celiac-friendly wares at farmer’s markets, she loves to share her journey with others who are seeking to improve their health through fresh, locally-grown whole food

Janice is keen to learn more! If you have an heirloom recipe that you can offer Janice, she will gladly repay with a jar of her very best strawberry jam!

From their hobby farm near the Sooke Pot Holes on Vancouver Island,  Janice and Danny Willis turn the fruits and vegetables from their garden into more than 130 gluten-free products. Sun-ripened and grown without the use of chemicals, strawberries, raspberries, blueberries and haskap berries are transformed into succulent jams, jellies and sauces from Janice’s family recipes.  As Danny harvests successive crops of corn, tomatoes, hot peppers, beets, peas, beans, carrots, lettuce, cucumbers, asparagus, rhubarb, zucchini, Janice creates a potpourri of chutneys, pickles, relish and vinegars. Their flavourful, always gluten-free creations are sought after at  farmer’s markets throughout the region – and by fans around the world. JDs sunshine jams AJD’s Sunshine Jams & Such – The Back Story

For more than thirty years, Janice followed and supported her husband, Danny while he served as an RCMP officer across Saskatchewan and British Columbia. In 2014, they chose to settle in the community of Sooke and explore what they could make of their ‘retirement’ years.

As it happened, in June of that year,  their son James was working for a chef in downtown Victoria who was searching for ‘locally-made’ jams to serve during High Tea. He wanted something that would outshine the competition. In short order,  Janice stepped up to provide the eight jams and two vinegars she had been making for years from family recipes. Soon enough, she began selling in Artisan’s Lane to passengers from the Coho and Clipper ferries and tourists from around the globe. Three years later, she and Danny have turned their retirement into a full-time, full-scale labour of love!

It was important to Janice that her products be enjoyed by customers following a gluten-free diet. Janice attributes her regained health to her 100% gluten-free diet after years of struggling with a host of auto-immune disorders. Not only does she love sharing celiac-friendly wares at farmer’s markets, she loves to share her journey with others who are seeking to improve their health through fresh, locally-grown whole food

Dedicating September 20th to Charity

Noodlebox Canada dedicates September 20th to charity. 50% of the day’s proceeds will be donated.

All locations of Noodlebox Canada will participate in a day of fundraising on Wednesday September 20th, with 50% of the day’s proceeds to be donated to support Canadian charities. While all 12 locations across BC and Alberta wNoodlebox Aill individually choose a charity beneficiary, the majority will donate to the Canadian Mental Health Association (CMHA), which Noodlebox has supported since 2014. The charity day is held every September, and over the years has raised over $25,000. Noodlebox aims to surpass last year’s total of nearly $14,000, and customers are encouraged to visit their local store to enjoy a meal while giving back.

“CMHA BC is grateful for the support we have received from Noodlebox over the last four years. The proceeds from this fundraiser have been channelled into community wellness programs that help people build mental health skills and resilience and promote positive mental health,” says Jocelyn de Montmorency, CMHA’s Victoria program manager. “Suicide alertness and prevention training workshops, along with core CMHA BC mental health promotion and recovery-focused programs such as Living Life to The Full, are just a few of the programs and services to have received a boost as a result of Noodlebox’s generous donations.”

About Melissa & the Bakery Backstory

  • happyditty! 1I have enjoyed baking and creating treats for over two and a half decades, using both commercial and independent training to fine tune my craft along the way.  My true interest began at the age of 17, while working in the bakery department of a local grocer, continued through once I moved onto restaurant pastry preparation, organizing  PTA bake-sale fundraisers, charitable dessert donations, and plying my husband’s co-workers with probably more sweets that was/is reasonable! It was that last group that finally gave me that nudge necessary to offer items for others on a special order basis.  Nearly four years ago, happyditty! was born and it became a hobby-business that took on a life of its own.
  • Having been diagnosed with Celiac Disease five years ago myself, I know how important it is to have safe gluten free options – which is why every GF order is handled with the utmost of care.  I have GF dedicated mixers, utensils, decorating supplies, and ingredients.  Each items is sterilized before and after each use, and NO gluten ingredients are out while GF items are being made. 
  • happyditty! 3All GF and ‘standard’ items are made at different times to prevent any possible cross contamination.  As an added precaution, I hold back a small amount of each GF item going out to do a taste test of my own to ensure I have no reaction before sending it out to others. I know how unpleasant a surprise glutening can be!  I am thrilled that in all this time, at no point have I, or any clients, reported any issues!  I take ALL dietary restrictions and allergies seriously and want to work to provide the best treats possible for everyone. I am always happy to hear someone say “I would have never guessed that is gluten free!”
  • In addition to running her own one-woman baking show – Melissa is Mom to four amazing children ranging in age from 24 to 16, three of which have grown to be incredible cooks and bakers in their own right – and a very special 21-year old who is happy to be the official taste tester.  She is also happily married to a 13+ years active duty Canadian Forces member who has also never complained about taste testing! She enjoys doing as much local charity work as time allows, and squeezes in hiking, walks along the Harbour and horror movies whenever possible.

Our crackers first made their appearance when I realized that I had a physical reaction whenever I ingested bread. Looking for a substitute. I use quotations here for “gluten-intolerance” because: with more research over the years into the rashes, wheat in general and GMO food, I’m  inclined to believe it more to be, for me, a reaction to the pesticide glyphosate in our food systems.

As a Natural Health Consultant with over 3 decades in the field, I have some knowledge into these subjects and in the creation of these crackers, health was the number one priority. We are what we eat after all and our conscious cracker are a perfect addition to our healing retreats here at Paradise Found.

If you have been in the hunt for a trusted gluten-free sushi bar, this is your event!

Victoria is the land of plenty when it comes to authentic Japanese restaurants with chefs direct from Japan however therein lies the problem. The language barrier made this celiac a nervous nellie, never sure that what I was saying about needing an absolutely gluten-free meal was being understood – and vice versa. Delivering on a gluten-free promise is more than swapping the wheat soy sauce for a gluten-free version. There are vinegars with barley enzymes to worry about, wheat noodles, items fried in a shared deep fryer. How to explain?

Fortunately, one of our intrepid GF Foodies, Maureen – a Celiac’s Celiac – was also in the hunt for something raw, delicious and gluten-free. Luckily for us, she discovered Itami Sushi on View Street near Douglas.

I popped by Itami recently and Manager Allan withstood my very best Gluten-Free Grillers! He had the soy sauces, the vinegars and the deep-fried challenges correctly identified and could run though the entire menu pronto to tell me what celiacs could and could not have. Itami even has special Allergen cutting boards that the chefs put into action. Tears of joy pricked my eyes!

There are a number of ingredients in this recipe that are part of the top 100 healthiest foods list. First of all, we have the fresh local spinach that is readily available at markets this time of year. Spinach is among the top greens for folate, and it contains high amounts of vitamin A, iron, potassium, calcium, zinc, and selenium, which offers antioxidant protection and supports thyroid function.” See recipe here

“When I think of spring, lamb and asparagus come to mind! The Galloping Goose Sausage Co. in Metchosin makes excellent herbed lamb sausages. They are gluten- , MSG- and preservative free. We are fortunate here at the Deep Cove Market to be able to carry fresh asparagus from Raphael at Guités Farm on Oldfield Road. I’m a big fan of easy one-dish meals, so I have combined a number of items I carry here at the Market into one entrée. This dish could easily become gluten free by substituting the pasta with a rice pasta or quinoa. I also think the lemon cooking sauce would pair nicely with chicken if you are not a lamb fan. We carry farm-fresh, free-range, antibiotic-free chicken from Kildonan Farms located right here in North Saanich. As a Natural Health Consultant with over 3 decades in the field, I have some knowledge into these subjects and in the creation of these crackers, health was the number one priority. We are what we eat after all and our conscious cracker are a perfect addition to our healing retreats here at Paradise Found.

“Union Street Grill & Grotto is elevating the downtown Courtenay dining game. The Downtown Courtenay restaurant re-opened Monday, March 20 with a brand new look that paves the way for a new upper floor and a rooftop patio that, pending approval, will create the City of Courtenay’s first rooftop dining space.

“Building this new floor and possibly opening a rooftop patio changes the game in terms of what we offer our diners,” says Emily Cummings, one of the managers of the Union Street Grill & Grotto. “We’re so excited for this! Rooftop lounges are such a big city luxury – imagine sipping cocktails with your co-workers at lunch while you bask in the sun and watch the action buzzing on Fifth Street. We’ll be the only place in downtown Courtenay offering this kind of dining experience.”

A longtime favourite of Comox Valley locals – renowned for its made-from-scratch dishes, longtime support of local producers and vast selection of gluten-free options – Union Street Grill & Grotto has been serving up lunch and dinner in downtown Courtenay for more than 19 years.

Union Street Grill closed for renovations on February 16 and re-opened on Monday. During this first stage of renovations, the full-service dining section of the Grill underwent a sleek redesign and the foundation was laid for the addition of a second floor and, perhaps eventually, the rooftop patio.

Cummings says that future stages of the renovation will focus on revamping the Grotto to reflect the updated Union Street style, adding a second floor dining area and expanding the children’s play area.

“We want to create the best family-friendly dining experience in Courtenay,” she says, adding that they offer a wide selection of kid-approved menu options. “We don’t feel you should have to choose between enjoying an evening on the town and finding a sitter to entertain your kids. Sizzling-hot grill fare, great drinks and good times – we want to make sure your whole family can be there to enjoy it.”

I had occasion to meet with the President of The Celiac Scene Fan Club while he was in town from Qatar and was mightily impressed by the gluten-free fare we were offered! The Screamin Brothers’ story grew in Canada but was born of tragedy.  In January 2010, the aftermath of the earthquake in Haiti was not far from the oldest of the Screamin Brothers’ thoughts.

One of J.R.’s brothers had arrived home from Haiti only weeks before, and his youngest brother was now stuck in the wake of the devastation, his orphanage destroyed and living in a tent.

J.R. knew he couldn’t just stand by idly so he took his love of creating with food and began selling his dairy free frozen treats to raise money to help.

It didn’t take long for these delicious products to become so popular that J.R.’s brothers offered to help with the business.  The boys could see that the more frozen treats they sold, the more children they could help both locally and internationally!

Today, the Screamin Brothers are determined to make a difference with the world’s greatest natural resource … children!

Using Organic Coconut Milk, water and organic guar gum as their base, they have created gluten-free, allergen-free treats in 9 delicious flavors – with more treats coming soon!

White Spot Restaurant next to the Canada Super 8 Motel offers an impressive protocol when it comes to gluten-free.  On a recent visit, Manager Shaun formerly of the the Caledonia location in Victoria, took the time to walk me through how each gluten-free order is handled.

When we choose a gluten-free item noted on their menu staff will also provide us with their Food Allergy and Sensitivity Information Guide to make sure that we are are completely at ease with our order. The Guide also lists all of the other top allergens, and provides a special section for Kids Menu items

White Spot Allergy KitShaun then blew my away by bring out not one, but two White Spot ‘Allergy Kits’ complete with an itemized list of dedicated utensil, cutting board, fry pan and fresh towels. He explained that when a gluten-free order is being prepared, the work area is first sanitized and the Allergy Kit is brought into action. After the meal is prepared, Allergy Kit items are run through the dishwasher, placed back into the container and and stored with a lid on top until the next gluten-free order is placed.

This particular location, adjacent to the Super 8 Motel location has a room that can be all ours so that we can get as wild and crazy as we celiacs are known/prone to be. There’s room for 25 of us – let’s party!

  • “When I was going through university, I was exhausted, ALL the time.  I had to drag myself out to hang out with friends, and if I had it my way I would have spent most days in bed sleeping.  It was not unknown for me to sleep 12-16 hours a day.  Call me crazy, but I related it all to the busy-ness of school.  I was even checked for anemia at one point (common with celiacs) and I was ‘fine.’  
  • The symptoms continued through school and the brain fog was undeniable.  I distinctly remember during my dietetic internship (like a medical residency except everything is nutrition based) at Kelowna General Hospital sitting in the office, charting on a patient and, literally, feeling like my brain was so fuzzy that I could barely keep my eyes from nodding off.  It was awful. 
  • Another thing I didn’t pay much attention to, was bowels.  I was always constipated.  Never the other way around. Never.  And, I also remember mentioning this to my gastroenterologist just before the endoscopy and he said ‘oh, well with your very low antibody levels and constipation, there is a very low chance that you are actually celiac but we will proceed with the endoscopy since you’re prepped and ready to go.’  
  • The piece of paper I received after the endoscopy said to follow up with my GP.  I did follow up with my GP and the report came back positive for celiac disease.  My GP said “well, you’re celiac.  But, you’re a dietitian, right, so this should be easy for you!”  
  • Perhaps I had a leg up in the nutrition part of it, but I think we all know that the gluten free diet is not a walk in the park.  And, although, I am so appreciative of the medical care I received, it did open my eyes to the lack of knowledge within the medical community when it came to celiac disease and the lack of support offered to individuals with celiac disease.  

That’s how Healthbean Nutrition was born!

Back to School & Work | Fall Recipe Ideas

selena-de-vriesWednesday night, September, 2017 our Kelowna Celiac and Gluten Intolerant Wellness Group meets with Registered Dietitian, Selena De Vries.  This is the first meeting of the Fall & Winter Session.

The topic: Family friendly gluten-free recipes for back to school/work and gluten free holiday strategies (Thanksgiving and Halloween). Opportunity for open Q&A.

These sessions are a support group style so come prepared to be involved in the discussion and share your wonderful gluten free recipes, ideas, and strategies so everyone can learn from each other!

For the September session, please bring your favorite gluten-free Thanksgiving recipe to share with the group. We will also be chatting about ways to handle gluten free holidays and outings like the teal pumpkin project for Halloween!
